A Chicken Salad & a Muffin Tin
Earlier today I finally received my ladder for my loft bed, which was nice to have. Now I don't have to suffer, crawling up the side rungs.
Today's Monday, the start of a new week! I moved back to school during the weekend, and that was chaos. After I get all settled in and everything, I'll write a post about it, but for now I'm just... existing in this heat.
Shoutout to all the other southern Californians trying to deal with this heat wave.
{Muffin Tin Monday for this week:
Keebler Coconut Dreams cookies, salad with wontons, chicken with sliced nuts,
water chestnuts, a second serving of salad, and mandarin oranges}
I paired my disassembled salad with orange juice. The chicken was sooo good, which surprised me, because usually the chicken in the salads are horrendously dry. The fried wontons added a nice crunchy texture to the mixture of carrot and lettuce shavings.
The Coconut Dreams cookies filled my Samoa cravings,which is very fortunate since Girl Scout season only goes so far. It melted a bit with the heat, that doesn't stop me from eating it. Hate coconuts, hate caramel, but it's such a delicious combo with chocolate.
One of these days I'll buy cuter cupcake wrappings, but for now, I'll try and figure out the possibilities of Muffin Tin Mondays--maybe next week I'll actually try to make actual recipes in a muffin tin.
I'm still so glad this chicken helps me live out my dreams of having not-dry chicken. Whatever the chefs did to this chicken--please keep on doing it, because it is so successful.
